3-4 chicken breasts
1 can Rotel or petite diced tomatoes
1 can red enchilada sauce
1 can green chilies
1/2 cup dark brown sugar
garlic salt to taste
(this will be mild, for more heat, add crushed red peppers)
Place frozen chicken in crockpot. Mix the 1st 4 ingredients and pour over chicken. cook on high for 4-6 hours. when chicken is cooked through, shred and add the garlic salt. allow to soak for several minutes to add flavor.

Chicken Parmesan Bundles
4 oz. Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp. Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated
HEAT oven to 375ºF.
MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
*Everything is already done up to this point*
BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and remaining mozzarella (I like to put it back in the oven to melt the mozzarella)
Serve with veggies and Enjoy. (Remember to take the toothpicks out)

Easy Taco Soup
1 can chili (with meat and beans) 1 can whole kernel corn (with liquid)
1 can diced tomatoes (with liquid)
1 can tomato sauce
1 can black beans (with liquid)
1 1/2 to 3 tablespoons dry taco seasoning mix
This meal is SO easy. All you have to do is open all the cans and combine everything in a crockpot or a larger pot if you want to cook it on the stove top. I prefer it in the crockpot, but stove top works great too. Cook on low for 6-8 hours in the crockpot or just heat on the stove. When you are ready to serve dish up the soup into bowls then add a spoonful of sour cream and a handful of Fritos chips to your bowl and stir it up. The sour cream and chips just add a little extra to the yummy soup! Enjoy!!!

Chicken Stuffing Casserole
Stuffing Casserole
Stuffing (2 boxes)
1 can of corn
1 can of green beans
1 can of cream of chicken (optional)
2-4 boneless chicken (cooked, cut in small cubes)
Mozzarella cheese to taste
Pasta/tomato sauce (optional)
Mix stuffing, green beans, corn with some of their juice, and cream of chicken. Add ½ c. of hot water if the stuffing is too dry. Add pasta sauce if desired. Mix it all together. Place the cooked chicken in the bottom of a clear dish. Add the mixture to the top, followed by the cheese. Bake at 350* for 30 min, or until cheese is melted.
Serve with rolls.

Stromboli
Stromboli
Bread dough (homemade or store bought)
6 oz sliced ham
1 1/2 cups shredded swiss cheese
8 pieces crumbled bacon.
Roll out dough into a large rectangle. Layer with ham, cheese and bacon. Roll up jelly-roll style starting with the long side. Seal seams. Place seam side down on baking sheet. Cut several 1/4 inch deep slits on top of loaf. Bake at 350 degrees for 26-30 minutes or until golden brown.
Were your stromboli is frozen, just watch it and make sure that it doesn't rise too much in the fridge. I tested one. With a little heat, mine defrosted and rose for 4 hours just on my stove top. So if you take it out and put it in the fridge in the morning, you might have to let it rise with a little heat before baking.
Slice and serve with Marinara sauce for dipping.

Chicken breast halves (as many as serving)
Thin slices of ham (2 slices per chicken)
Sliced Monterey jack cheese
Bread crumbs
¼ c. melted butter
Topping Sauce:
1 can cream of chicken
1/2-1c. Sour Cream
1/4 c. (or less) lemon juice
Cold Milk (if the sauce is too thick)
Pound meat with a mallet to flatten the chicken (the thinner the better). Roll chicken in butter and the breadcrumbs thoroughly.Then place the cheese & ham together in the chicken, roll together and fasten the edges of the chicken with toothpicks. Bake at 350* for 40-45 minutes until golden brown (watch the edges of the ham).
Mix the ingredients for the topping sauce and heat thoroughly. Then poor the sauce on top of the cooked chicken. Serve with rice and a veggie.

Confetti Chicken Wraps

2 Chicken Breast (Cubed)
Diced peppers
1 cup frozen corn
1 1/2 cups mild Pace Salsa
1 tsp chili powder
1 tsp cumin
2 cans of pinto beans (drained and rinsed)
There are two ways you can cook this-
In a large frying pan or wok cook cubed chicken and peppers then add the other ingedients.
Or you can put it all in your crock pot and cook it on low for 7-8 hours, and then just use a fork and shred your chicken and put mixture on Tortilla!
Its also good to serve with sour cream, guacamole, cheese, and salsa
